…and then I made dinner

First time I cooked a meal myself in the new casa! It was delicious. I made quinoa with roasted garlic and pecans smothered in sautéed bell peppers, zucchini, and summer squash. I wish I had taken a picture! The colors were beautiful and the taste even better, I think I’ll add some lemon next time though. I’d also like to try it with some garbanzo beans, but I couldn’t fine that at Target!

Busy Bee

I’ve been so busy! I’m so sorry for any disappointment, but I’ll be back to regular as soon as I possibly can. Being back in Boulder is perfect. Don’t get me wrong, I love going home and seeing family and friends, but once you’ve been in college for one year, it’s pretty difficult to live under your parents rules for extended periods of time. Anyway, Boulder. Mountains, friends, freedom, parties, school, my own house, cooking, creating, experiencing. What more could a girl ask for? Today I got so much done! After breakfast with my neighbors, I went to class and then got the rest of my books at the bookstore, then came home and made some lunch while I did my homework for tomorrow. (Yes, I already have homework, but it’s kind of refreshing to be honest). I made my final trip to Target for a while where I bought quinoa, pasta, veggies, eggs, lemons, spices, and nuts. That felt really good, those were some essentials I really needed. I even found a new type of pasta made of tomatoes and carrots! I then had another class, which I’m very excited about and will tell you about in the near future, and returned home only to leave shortly after to pick up some things I left at a friend’s house over the summer…
