Living in my own house has given me so many opportunities to become more creative in my culinary endeavors. Although I eat out probably about five times a week, I cook quite often and really enjoy it. I don’t always have all the ingredients I need to make specific recipes, so I often just look at what I have in my pantry and mix things together that sound good to me. Today, I really needed to use up some lentils I cooked last week, so here’s what I came up with!
- 1 can Campbell’s Tomato Soup
- approx. 1 C cooked lentils
- olive oil
- ~ 1 handful of spinach
- 1 C diced tomatoes
Make tomato soup according to the directions on the can. Pour in cooked lentils. Set to side. In a pan, pour a little olive oil and add crushed garlic (~ 1/4-1/2 clove, depending on personal preference). Add diced tomatoes to pan and sauté for a few minutes until almost cooked to desired softness. Add spinach to the pan and sauté until just wilted. If there is a lot of olive oil in the pan, drain out. Otherwise, add everything in the pan to the tomato soup. Heat again to desired hotness and enjoy!
As you can see, I used the soup as a base and added ingredients I already had. You can do this with anything, though! I was thinking next time I might add garbanzo beans, tomatoes, and broccoli (and maybe cheese?); or maybe even a little chili powder, some black beans, and corn! The possibilities are endless, comment with your brilliant ideas! 🙂

I just spent my whole long weekend at Phish in Commerce City! It was the best weekend I think I’ve ever had. Since Phish only does true festivals every two years, this was technically not a festival, but there were camp grounds and many of the people attending camped out, along with myself. First and foremost, the music was absolutely out of this world. These were basically my first Phish shows, and I couldn’t have asked for them to do it better. The first night was the Fuck Your Face show, which was historical because of the setlist; night two they nailed it with some of their best songs ever, and night three was super jammy and transcendental. My closest guy friends from home are total Phish Heads, and prior to attending these shows, I really didn’t get it. Now I’m ophishially hooked. I completely understand. The music is out of this world, the crowd is phantastic, and the vibes are all around happy and loving. Best money I’ve ever spent… now I just can’t wait for Furthur at Red Rocks Amphitheater!

I’ve been so busy! I’m so sorry for any disappointment, but I’ll be back to regular as soon as I possibly can. Being back in Boulder is perfect. Don’t get me wrong, I love going home and seeing family and friends, but once you’ve been in college for one year, it’s pretty difficult to live under your parents rules for extended periods of time. Anyway, Boulder. Mountains, friends, freedom, parties, school, my own house, cooking, creating, experiencing. What more could a girl ask for? Today I got so much done! After breakfast with my neighbors, I went to class and then got the rest of my books at the bookstore, then came home and made some lunch while I did my homework for tomorrow. (Yes, I already have homework, but it’s kind of refreshing to be honest). I made my final trip to Target for a while where I bought quinoa, pasta, veggies, eggs, lemons, spices, and nuts. That felt really good, those were some essentials I really needed. I even found a new type of pasta made of tomatoes and carrots! I then had another class, which I’m very excited about and will tell you about in the near future, and returned home only to leave shortly after to pick up some things I left at a friend’s house over the summer…

I can’t wait anymore! I’m so excited to be in Boulder and back with all of my friends, it’s almost torture at this point! My flight leaves tomorrow at 8:15 am and I’m so stoked. My cousin is picking me up from the airport and I can’t wait to see him. He’s my year and goes to school with me at Boulder which is great having him out there. I’m arriving at my house around 12:00 pm and I cannot wait to meet all of my roommates and unpack all of my things and set up my bedroom.
P.S. I haven’t had much time for this lately because I’ve been packing and organizing, but as soon as I’m all moved in regular posting will return!
